The Bikini Cocktail

Makes enough for 10 servings

Ingredients for the Citrus Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar

Ingredients for the Premix (yields 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Method

For the Cordial: Place the listed ingredients inside a pot, heat until it reaches a gentle boil, mixing to dissolve. Next, turn off the burner and leave to reach room temperature fully. Transfer into an sealable bottle, seal keeping it in the fridge, it will last for about a month.

For the Cocktail Base: Pour the specified liquids into a sizeable container, allow it to infuse for 60 minutes, then filter it , ideally through cheesecloth, to ensure it's perfectly clear.

For serving: Measure 85ml of your cocktail base into a stirring glass filled with ice, and stir carefully for a minute until cold. Strain to a chilled martini glass or equivalent, garnish with the cranberries and complete it using a light spray of mandarin oil over the top.
